Cooking with Emeril or Time to try some new stuff.

I've been doing a lot of cooking lately but nothing really new or exciting. Then, I started to watch Emeril Live! and that all changed. Suddenly, there were new recipes to try and stuff that fit into the "I can do that" category.

First I made some Kickin' Chili followed by the Kickin' Chili Tamale Pie.

The Chili recipe was from his episode where you got two meals from one base recipe and he was right. We had plenty of chili for both meals and we had them during the last couple of cool days we had before the hot weather hit. The chili had a lot of interesting ingredients (four bottles of dark beer!) but had a nice flavor and kick to it.

The other night I decided to make something lighter just because of the hot and humid weather we were having and went with the Taragon Chicken Salad. That meal also left us with enough leftovers for lunch the next day and it tasted awesome!

Both PW and myself enjoy watching his show and since he's been on the air for years we have plenty to watch without hitting any repeats!

you should make some meals ahead and freeze them before your new bundle of joy arrives. i packed my freezer and was so glad i did.
