I made Rachael Ray's Chicken Kiev for dinner last night.
I didn't have any fresh herbs but I decided to make it anyway. I used parsley flakes, dill, cumin, and some chicken grilling spices that I had in the cupboard. One hint/confession that I have to make is that I often used dried herbs because then I don't have to shop or plan ahead for what I want to make.
I don't have a mallet for flattening meat so I used my fist and palm to do it instead. Yet another use for all the karate lessons!
I had wooden skewers in the cupboard that I broke down to size with Middle Daughter's assistance and used them to close up the chicken after I added the chunk of herb-encrusted butter.
It was incredibly good. Beautiful Wife wasn't really that hungry and ended up eating an entire breast because she said it was so good. I'm not a big fan of dill but it was really good in this recipe. I would definitely make this again and will experiment with different herbs too.

I didn't have rose petals and I used my rice cooker and added all the ingredients one by one. You can find instructions here if you want to give it a try.

Hi, Bob! Just wanted to stop by and thank you for livening up the party over at my place. I adore Rachael Ray, even my four year old gets excited when her show comes on. Hey, for future reference, a rolling pin works great for beating your meat. Uh, that doesn't quite sound right, does it? All kidding aside, it totally works. Just place your breasts between two pieces of wax paper and pound away (man, I'm good *read bad* today)...tenderization and great stress relief at the same time. Hey, what can I say I'm a huge fan of multitasking.
