We watched a Very Queer Eye Christmas a couple of weeks ago and they had a cool recipe called Baked Eggs and Mushrooms in Ham Crisps.
I made that today for brunch (we tend to sleep in on the weekends) and everyone liked them. I made the mushrooms more palatable by using portobellos and by putting them and shallots in the food processor to mince them rather than chopping them by knife.
I used a non-stick muffin pan a light coating of EVOO in each spot and they came out easily. The recipe calls for salt in the mushroom/shallots mix but I'll probably skip that next time since the ham is plenty salty on its own.
